avocado bread
I have a love-hate relationship with TikTok. While I love learning new things from others - whether they be new recipes, makeup tips, or strategies to destress - I spend countless hours scrolling endlessly through videos, wondering how time could pass so quickly. This recipe is a product of one late-night scrolling session thanks to Yumna from @feelgoodfoodie, who inspired me to recreate this avocado bread, known for its use of avocados instead of butter or oil. And once I made it, I fell in love with TikTok yet again. This bread is moist, perfectly sweet and filling, making it a great snacking cake or breakfast bread.

INGREDIENTS
2 cups all-purpose flour
2 large, ripe avocados
3 large eggs, room temperature
3/4 cup sugar
1 1/2 tsp baking powder
1 tsp cinnamon
1 tsp salt
DIRECTIONS
Preheat oven to 350ºF/180ºC. Prepare a 9” loaf pan with non-stick spray and parchment paper, letting the parchment hang over the sides for easy removal later.
Whisk together dry ingredients (flour, baking powder, cinnamon & salt) until well combined.
Mash avocados thoroughly, then add sugar. Cream together the avocado & sugar using a hand mixer (or your strength & a whisk) until mixture is light and airy. Add in eggs, then mix together until combined. Fold in dry ingredients using a rubber spatula, careful to not overmix.
Pour batter into prepared loaf pan & smooth the top. Bake for 45-55 minutes, or until a cake tester (or toothpick) comes out clean through the center.
eat it with: greek yogurt and berries for breakfast or ice cream for dessert.

store: in an airtight container for up to 3 days at room temperature; in the fridge for up to 1 week.
